Haru Koshinohomare 90 Yellow (越の誉 90YELLOW) is made of Minori Hazuki rice grown in Kashiwazaki and Kariwa Village and milled to only 90%. A 90% milling ratio means that almost no rice was removed, so the taste of the new rice remains as it is. It has a robust and rich flavour that can only be achieved with low milling, the strength of unfiltered raw sake and the subtle fizziness of freshly brewed sake.
This sake was initially called "Junmai Minori Hazuki Shinmai Shinshu" (純米葉月みのり 新米新酒).

The city of Kashiwazaki in Niigata Prefecture, where the Hara Sake Brewery is located, is in the middle of the Sea of Japan side of the Chuetsu region, surrounded by fifteen beaches and the three mountains of Kariwa (刈羽三山 Kaiwa Sanzan) - Yoneyama, Kurohime and Yaishi - and rich with sea, rivers and mountains. At the time of the brewery's foundation, Kashiwazaki prospered as an inn town on the Hokkoku Kaidō (北国街道 Northern Highway) and a shipping town with its Sengoku boats. As a result, it is said that the capital's culture, full of elegance and refinement, blended into the city, and a unique culture blossomed. Supported by the region's rich natural blessings and high cultural standards, the taste of sake must inevitably have been refined. Hara Brewery is located near the beautiful coastline of the Sea of Japan, where you can feel the summer breeze and the snow falling with the wind in winter. Kashiwazaki's nature, people, and culture are all reflected in the barrels, adding a new dimension to the taste that has evolved over 200 years since the brewery was founded.
Kashiwazaki faces the Sea of Japan and has had a thriving salt manufacturing industry since the early Edo period . Hara Kotaro, the founder of Hara Sake Brewery, was a foundryman who made pots for boiling seawater and repaired them. The name of the shop was 'Nabeya' (なべや). Even today, the trade name is carried on in the character 'na' engraved on the sake cellar. Kotaro was born as the heir to the Nabeya family, but he handed over the reins of the family to his younger sister. He decided to start a business with a fresh start. This was the birth of the Hara Sake Brewery in 1814. It flourished steadily in the prosperous port town of Kashiwazaki and became one of Kashiwazaki's leading breweries by the time of the Meiji era . The brewery suffered two disasters: the Great Kashiwazaki Fire in 1911, when it completely burned down in a major conflagration, and the Chuetsu Earthquake in 2007.
Nowadays, Hara Shuzō produces a wide range of sake, including Daiginjō, Junmai Daiginjō, Junmai, Ginjō, Honjōzō, and regular sake. The quality of the sake is relatively light (slightly dry, clean, and beautiful). Still, in recent years, Hara has also brewed many freshly pressed sakes with a fresh, thick flavour, which consumers have received well at national and international competitions and contests.
