Hananomai Abysse (花の舞アビス)

Hananomai Abysse (花の舞アビス) is made of rice grown in Shizuoka, white wine yeast from Chablis in the Burgundy region of France, and groundwater from the Akaishi Mountains. It is a unique sake designed to pair well with Western food. Hananomai achieved this by combining white wine yeast from Burgundy and Shizuoka Prefecture rice, reflecting their philosophy of brewing sake with a focus on food compatibility.

This versatile sake exhibits significantly different flavour profiles depending on its serving temperature. This temperature sensitivity makes it an excellent pairing for dishes featuring seasonal ingredients. When chilled, the sake's pleasant sourness and light bitterness enhance the sweetness of the food. The rice flavours become more prominent as the sake warms, while citrus notes provide a refreshing counterpoint. Recommended pairings include sauteed shrimp and scallops, white fish à la Meunière (pan-fried fish with lemon-butter sauce), and cream-braised chicken thighs—recommended temperature: 8°C to 18°C.

The brewery was founded in 1864 by Takada Ichizaburo (高田市三郎) in Miyaguchi, Aratama Village, in Tōtōmi Province. The name "Hana-no-Mai" (花の舞) derives from one of the ancient dances traditionally performed in the Tenryu River delta. The word hana represents the flower of rice, which is the source of life and is used to pray for a good harvest. Hikusa Shuzo was established in 1949 and renamed Hananomai Sake Brewery in 1956. All rice used is produced in Shizuoka Prefecture.

Soft and gentle attack with a mild sweetness, moderate acidity, and a light bitterness. On the palate, a moderate sweetness and a sharp acidity followed by light bitterness and astringency. Short finish with mineral elements. Wine lovers and those into wine yeast will love this type of sake. Old-school sake aficionados might object to this hybridisation.

If you prefer the taste of white wine, why not stick to white wine?
