If there's one sake that represents the snow country of Yamagata, it is the Setchū Jukusei. Matured in snow-covered tanks, it is light and gentle and can be enjoyed chilled or warmed. It has a nose of dried fruit and koji. It is quite dry and has a good balance of acidity and sweetness with a pleasantly spicy finish.
