Fukumasamune Junmai Karakuchi Namazune (福正宗 純米辛口 生詰), the flagship label of Fukumitsuya Brewery, is a beloved local sake in Kanazawa—Japan's culinary capital and historic castle town of the Kaga Domain. It's a sake cherished as part of everyday meals and deeply rooted in the local dining culture. Fukumasamune Junmai Dry Namazume is made with Association No. 7 and Association No. 701 yeast and black koji—a rare method in sake-making. It features a fresh, vibrant aroma from full fermentation, a crisp citric acidity from malic acid, and a rich umami flavour with a dry finish. This sake pairs with traditional Japanese cuisine, complements Italian and French dishes exceptionally well, and can be enjoyed at various temperatures. Thanks to an advanced aseptic bottling system, this namazume sake—usually requiring refrigeration—can now be distributed at room temperature.

Fukumitsuya Sake Brewery is located in Kanazawa, Ishikawa Prefecture. It was founded in 1625. The culture of Kanazawa flourished during the Edo period when the capital of Kaga Province became famous for its craftsmanship in kimono, gold beating, lacquer craft and ceramics. The town, surrounded by the sea and mountains, also enjoyed a rich food culture. Today, it is known as a modern city with a history of traditional Japanese culture that is still appreciated. Fukumitsuya is known as a junmai-gura, a brewery specialising in junmai sake.

The Kagatobi label (加賀鳶) derives from the firefighters of Kaga (modern-day Ishikawa Prefecture) who served at the domain's Edo residence. They conveyed an image of strength and resilience, being highly skilled but short-tempered, qualities that made them popular among the population of Edo. Kagatobi is made from high-quality sake rice and local groundwater, with a variety of tastes reminiscent of the Kaga firefighters.

A very light and gentle nose, with subtle hints of dried fruit such as raisins and apricots. When served unheated, it has a medium body and a smooth, velvety mouthfeel—earthy and rich, with a well-balanced interplay between brown sugar-like sweetness and a gentle acidity. True to its label, it finishes dry. Brewed with black koji, this sake can be enjoyed at various temperatures, though it's worth noting that it received a Kanzake Gold Award in 2021. Once warmed, its character deepens. While the acidity remains, the texture softens further, and new layers emerge—evoking notes of warm chocolate and creamy pudding. Although the chocolaty nuance was delightful at atsukan (熱燗) temperature, we wished the overall flavour was just a touch more intense.
