Fujii Kurabito no Banshaku Genshu is an undiluted sake made by Fujii Brewery in Oita Prefecture. "Kurabito no Banshaku" translates to the sake brewer's evening drink, hinting that this sake was reserved for the kurabito.

Kurabito no Banshaku has a rich aroma of dried fruits reminiscent of narazuke pickles and overripe figs. It is golden and has a thick, creamy texture that glides smoothly on the tongue. It is sweet and strong in the middle, with a pronounced umami flavour and a gentle bitterness, and ends with a long and bitter aftertaste and a hint of sourness. This is a true genshu, undiluted and potent with an alcohol volume of up to 21%!

This is part of a jizake set we ordered from Belluna Gourmet, an online shop that also sells on TV. The brewery does not list this item on its website. Perhaps that's why they call it "kurabito's secret"?
