Chikumanishiki Junmai Daiginjō Genshu is made of Yamadanishiki polished to 50% and Association yeast No. 18. It is a mellow, full-bodied sake with a rich flavour.

Mild, sweet, full-bodied, earthy mid-palate with slight acidity and a mild and moderately spicy finish. Running in the ハイコスパ (haicospa, "high cost performance") class, it is spectacularly good.
