Bon Junmai Ginjō Nakadori Hiyaoroshi is a seasonal sake made of Yamadanishiki rice contract-grown from the special A-producing area of Hyōgo and Gohyakumangoku rice from Fukui milled to 55%, pressed in winter and aged until midsummer.

Bon's Hiyaoroshi is a limited sake that is available from autumn to spring. Squeezed in winter and aged through the summer, it has a smooth and elegant aroma. Sweet and spicy nose with fruity notes (melon, green apple, banana, berries). It is a gentle and elegant approach with lots of fruity sweetness; it has plenty of acidity and wonderful umami with deep and smooth flavours. On the finish, it has outstanding spiciness. We chilled it and let it reach room temperature when deeper and smoother flavours emerged, resulting in a genuinely mellow taste.

Feeling ready for a challenge, we heated for the first time what we'd considered a top-notch premium sake. We were stunned: deep, mellow flavours emerged, emphasising the fruity sweetness and bringing out tastes reminiscent of steaming plum pudding, Christmas pastry and chocolate cake. Truly outstanding.
