Fruity nose with pronounced fragrance of berries, white peach, and a distinct sourness. Hints of ripe fruit. The first sip is overwhelming: deep, rich, earthy, with a velvety texture, a mature sweetness deriving from ageing the sake for over a year, carefully balanced against moderate acidity and a pleasant spiciness. The result of ageing the sake at low temperatures is exorbitant. It has a relatively short, mildly sour finish with a spicy tingle at the end. Indeed, a once-in-a-lifetime sake!

We were happy we procured an isshobin.
