The origins of Ōyatakashi Brewery date back to the Battle of Mimasetōge (三増峠の戦い) in 1569, when Takeda Shingen of Kai and Hōjō Ujiyasu of Odawara fought in the village of Aikawa, where the brewery is now located. The first-generation Ōya was a cavalry commander of the Hōjō forces but quit the samurai profession after the battle, serving as a feudal lord for several generations. Later, he took over brewing shares from a brewer in the town of Ōiso in present-day Kanagawa Prefecture and started a brewing business, the origin of Ōyatakashi.

Ōya Shunsuke (大矢俊介) is the 8th generation brewmaster. The town of Aikawa, where the brewery is located, is in northwestern Kanagawa Prefecture. The mountains before the brewery produce wild vegetables in spring, and the rivers catch landlocked salmon and rainbow trout. Ayu (sweetfish) can be caught in early summer, and deer and wild boar can be caught in late autumn, enjoying seasonal flavours. Sake also has seasonal flavours.

In 2008, the Ōyatakashi became a Junmai-only brewery to produce sake that can be enjoyed daily with meals. The brewery produces Zansō Hōrai, brewed quickly, and Shoryu Horai, made from fresh yeast. Every year, the brewery experiments with new sake rice, the rice polishing ratio and the method of kōji making, producing seasonal products in small volumes, such as "Shirokushiki" (四六式) using white kōji and low-alcohol "Queeen".

Ōyatakashi Brewery offers tours where visitors can learn about the sake brewing process and sample the sake.

Take two on Ōyatakashi's Hiyaoroshi: The aroma is quite forward, showing citrus, apple and a soft lactic note. The first sip is gentle, with a smooth, almost velvety feel, but the citrus edges soon become more defined. The rice character comes through clearly, carried by a dry, steady umami and a neatly shaped acidity.

We began tasting at room temperature and then warmed it to nurukan. The warmth brought out a creamier texture, fuller umami and a clean, lingering rice note. Taken up to atsukan, the umami eased off and the flavours settled into a flatter profile, so for this hiyaoroshi anything from chilled to nurukan seems the most rewarding. On the second day, starting again at room temperature, it showed a gentle sweetness while keeping its citrus-driven acidity.

Zansō Horai Hiyaoroshi opens with a pronounced aroma, boasting notes of green apple and citrus, complemented by a sharp, spicy undertone. The palate presents a light, velvety texture, with a burst of citric flavours followed by a dry, almost austere finish. The aftertaste is clean and refreshing, devoid of any lingering sweetness. While it's enjoyable chilled, its character transforms as it warms to room temperature. At lower temperatures, the sake maintains its crispness, while at warmer temperatures, it reveals a more nuanced flavour profile. Splendid across all ranges.
