I love the sweet daikon and cucumber salad
I don't know how sweet it is, but an easy salad dressing is...
vinegar:soy sauce: oil:sugar=1:1:1:0.5 (Trust your tongue, and change this to your taste.)
Mix vinegar, soy sauce and sugar well, and then add and whisk your favorite oil. Sprinkle dried bonito shavings, if available.
I love olive oil, so I usually use it.
If possible, it is an idea to use rice vinegar as well as different sourness such as fresh yuzu/lemon juice, Chinese black vinegar, pickled ume paste, or else to make the sourness milder and enrich the flavor.
You can keep grated daikon in a freezer.
I love simple omelet, tamagoyaki, with drated daikon.
