What books you recommend for JLPT prep?

What books do you recommend? Nihongo So Matome? Kanzen Masuta?

Nihongo so matome but also try out AnkiWeb. You can download pre made decks with all the required grammar, vocabulary and kanji direct to your phone for easy review.

How long do you took to complete all the editions of Nihongo so Matome? Can it be done in less than a month or two?

I use the 完全マスター series to study on my own. I passed N2 and I think the exams have changed a bit in a way the books haven't caught up with quite yet but it was definitely worth it. One problem was the book only did the multiple choice questions as _ _ # _ (can anyone describe it better?) but the exam also had _ # _ _ which threw me off a bit but it's not a massive difference
