Saki replacement

I saw that all of the good food contains sake but isn't there a way to cook without sake? Like a replacement. And what is in mirin?

Sometimes, if I don't have sake, I use a dry white wine. I think it does just fine as a replacement. Mirin is a sweet cooking rice wine.

Is there some non-alcoholic replacement?
I know that the alcohol will steam off during cooking but in some recipes you add sake at the end right before serving
