Could somebody tell me when referring to an outdoor, open-air market, such as a craft fair or a similar event, what reading of the word 青空市場 should be used, あおぞらいちば or あおぞらしじょう? I'm not quite sure about the distinction between the two, and any help would be great! Thanks in advance!

"outdoor market" is "野外市場"(やがいいちば:Yagai Ichiba).
"open-air market" is "青空市場"(あおぞらいちば:Aozora Ichiba).

いちば vs しじょう

いちば is used when referring to an actual, concrete market that you go to when you want to buy something.

しじょう is used when referring to the stock market, financial markets, etc.

But the famous Tsukiji Fish Market in Tokyo is referred to as 窶堋ｵ窶堋ｶ窶堙･窶堋､ﾂ、no?

Yes, and the vegetable markets my coworkers haul vegetables to are also しじょう.
