For the following two sentences:

Michiko at hamburgers on Friday. She ate hamburgers on Saturday, too.

Is this how I would write it?

みちこさんは金曜日にハンバーガーを食べました。
土曜日にもハンバーガーを食べました。

I'm pretty sure I can leave off the ハーンバーガを part, but I want to make sure I understand where も goes in the second sentence.

Am I close?

EDIT: Added in the に before the も

Yes, you're very, very close!

土曜日もハンバーガーを食べました。

Delete "ni," correct your typo "t" to た and change ハーンバーガ to ハンバーガー

These foreign language borrowings converted into katakana will become easier to write for you as you get accustomed to how the Japanese speak.

I edited the changes above. Are they correct now?

It would be ok for the second sentence to just be:

土曜日にも食べました。

Right?

Could you just say,

土曜日にも

and be understood, or is that too short?

Yes, 窶忱窶破窶愿ｺ窶堙俄?堙?ﾂ食窶堙冷?堙懌?堋ｵ窶堋ｽﾂ。is OK. (Since the sentence is not strictly formal, "ni" is not always necessary. If you're a stickler with grammar, use "ni" by all means. )

窶忱窶破窶愿ｺ窶堙俄?堙? will certainly be understood, but it's not natural Japanese. I'd say:
窶忱窶破窶愿ｺﾂ（窶堙可）窶堙?窶堙仰。
窶忱窶破窶堙?窶堙仰。ﾂ（窶愿ｺ can be omitted when referring to the days of the week, such as ﾅ椎ｽ窶破ﾂ、窶ｰﾃ寂?破)
But in formal speech, use 窶忱窶破窶愿ｺ窶堙俄?堙?ﾂ食窶堙冷?堙懌?堋ｵ窶堋ｽﾂ。

Ah I wanted to say you could also use も in place of を。
Another example is using it too state agreement.

Ａさん： 私はハンバーガを食べたいよ。
Ｂさん： あぁ、私も食べたい。
A: I want to eat a hamburger.
B: Ooh, I do too. (I also want to eat one.)
