Noun wo Suru vs verb

Got a daily sentence today from learnwitholiver.
私たちは今朝、45分間話をしました。
Question is they use noun (話) with suru. Why not verb form 話す?
Best I can find on Google search is it is just a nuance?
 
The verb version 45分間話しました。is acceptable, but it's more often used for a situation where the speaker is talking/speaking to someone unilaterally. This wouldn't be a grammatical thing, so, for example 私たちは今朝、将来について45分間話しました。is a mutual conversation about their future.

So, someone who gave a speech would be the verb usage?
A debate by multiple people or a group discussion would tend to be noun/suru?
 
It's not always so. The verb version can be used also for a mutual conversation.
e.g.
教室でみんなと勉強の方法について話しました。

The key is the particle と here, thus, the context is more crucial than which, 話をする or 話す, is used.


Incidentally, there are cases where only the noun 話 can be used.
e.g.
A: 悲しい話をした。
B: 悲しく話した。

While the contents of the talk is sad in A, the way of talking is sad in B (sad story vs. to talk sadly). It's impossible to say "sad story" only by the verb 話す without using the noun 話.
 
For clarification, I'm talking about 話をする vs. 話す, not "noun をする vs. verb" in general. The difference in meaning or nuance varies depending on the word (e.g. 動きをする vs. 動く, 遊びをする vs. 遊ぶ, 働きをする vs. 働く,,,).
