が can't be replaced with の in this case.

This might be a bit advanced, but 会社員は駅へ行く途中で(彼の)お母さんが
買ってくれた財布を落としました sounds more natural.
は usually can't be used in the adjectival clause. (It's used only as the contrastive marker.)
は covers the whole sentence. You can use it in the first two examples, since the subjects of the main verbs やりました and 落としました are 彼女 and 会社員, respectively. Whereas in the third example, 私達 is not the subject of 美しかった. So, it should be 私達
が/の旅行した国は美しかったです.
Where would 'another', 'all', and 'two more of' fit into these relative pronoun cases?
The order of words could change depending on the sentence structure.

それが、してほしくないもうひとつのことです。
それが、もうひとつのしてほしくないことです。
There is another thing I don't want to do.
してほしくないことがもうひとつあります。
もうひとつ、してほしくないことがあります。
But 洗ったお皿をすべて, 話していた人がもう2、3人 wuld be more common.
Incidentally, "relative" is the term in English grammar. There is no equivalent to "relative pronoun" in Japanese, and "relative clause" is called 連体節[れんたいせつ] "adnominal/adjectival/attributive clause" in Japanese grammar.
