Half gobo (20-30cm)
1/4 to 1/2 carrot
2 tbsp mayo
1 tsp soy sauce
Pinches of white sesami seeds (Good to roast them lightly in a non-stick pan)
1) Peel and cut gobo and carrot into julienne strips, and parboil them for about 3-4 mininutes. (Some people put the julienned gobo in water or vinegered water for scumming them before parboiling or frying. But I don't do it, for I like some wild bitterness of gobo.)
2) Drain 1), or cool them down in iced water if you are deadly hungry.
3) Toss with mayo and soy sauce.
4) Squeeze semami seeds with your thumb and index finger to enhance the sesami aroma, and sprinkle it on 3).
5) It is good to rest this salad in a fridge before you cook other dishes.
