Culinary Interests.

As this is a Travel section, I'm curious about the lack of culinary interest in the searches I've done throughout the various threads here. I would think that a culture so rich in their traditional dishes, would apeal to basicly everybody at one point or another. Even if just a passing thought.
I myself am a studying Baker and Pastry Chef and am looking into the lesser touched uppon topic of Bakeries in Japan.
In every culture, bread plays a major role that is often over looked or down played. Even in Japan there are nationaly noticeable doughs that find their way into every pantry and kitchen.
I'm Curious, and will be looking on other sites as well, if there are any "area specific" towns that have a higher bread production that other towns or villages.
I've studied Bread and Pasteries, for the past 5 years. A relationship has developed and it is now a part of my life. My personal goals are a bit more ambitious. Anyway, I'd like to dedicate a portion of my impending travels to taking a brief look into Japans world of Pastries and Breads, and any glimps into others' personal experiences, stories, tips, plans, and overall knowledge would not only help me, but maybe others that will look back to this thread and do a search of their own.
So yes, in summary, I would like to know what kind of bakeries you have experienced or would like to talk about that you have heard about or visited. Locations, Famous Dishes, Pastries. Even the things that may seem insignificant will have, at some point, been made by hand from someone else who knows this aspect of the Japanese culture.
The Japanese, in a stereotypical sense, are not big on sweets, however they cater to a large tourist and international crowd, so all is not lost. One bread in particular, I'm sure most of you have heard of; "Milk Bread", should help to end this request by giving a small idea as to what I'm after.

Don't know how your searches missed it, but plenty of posts have been made by people asking about where to eat certain foods (even if it is to ask where the best foods in Japan are).

As for cooking interests, there isn't a lot for travelers probably because most travelers don't cook when traveling.

As for bread, it is not a traditional food in Japan, nor in most Asian countries. Think rice. Bread has entered Japan's menus and continues to grow but it is not nearly as much a staple as rice today.

So, exactly what were you looking for?
