I'm practicing grammar and translation as usual in order to improve my comprehension skills.

This time, however, I found a bit harder structure whose precise meaning I cant seem to comprehend with good accuracy.
"以前は山に木の実、つまり 、野生の動物の食べ物がたくさんあったのですが、気候や人間の山に対するかかわり方などの環境の変化により、それがすくなくなってしまいました"

(the Bold words are the ones I cant comprehend)
1 - kankyou ( 環境 ) stands for "enviromnent" or "circumstances"?
2 - ni tai suru ( while ni tai shite means "in contrast", i can't find a better suitable meaning for this one here)
3 - kakawarikata? (かかわり方, way of relating to??)


My (adapted) translation is the following:

"Before, the mountains used to have a lot of food(fruits/berries) for the wild animals, however, due to the climate and the way the humans have been interfering towards the Mountains, these fruits got more scarce"
some explanation and a better translation is welcome.

As you can see in the examples in the dictionary I linked above, 対する can mean "opposite, contrast", similarly, 対して can mean "to, for, towards,,,". It conjugates depending on its function("modifying a noun" vs "continuous or adverbial usage"), not its meaning.
