Hello there!

Recently I came across this sentence:

小川さん、この牛乳、ちょっと可笑しいんです。味がいつも違うんですけど。​
I think the meaning of the last sentence is along the lines of "it tastes different than usual", but I'd appreciate more clarity on the use of と here.

It's not just along those lines, that's exactly what it means.
と is, specifically, the particle you use to say different from/than something.



比較の基準を表す。「君の―は比べものにならない」「昔―違う」
 
Ah, I get it. Way back I learned the construction サッカーと野球とどちらが面白いですか。This must be the same comparative use of と. Hm, I failed to make the connection until you pointed it out....
