Yonetsuru Junmai Ginjō Kimoto No. 6 Yeast (米鶴 きもと純米吟醸 6号酵母仕込み) is meticulously brewed from Yamagata's renowned "Dewanosato" rice, employing the time-honoured kimoto method. Yonetsuru Brewery in Akita was founded by Umetsu Ihei (梅津伊兵衛) in 1697, at the end of the Genroku era. He worked with great passion and ambition in an environment blessed with clear water and fertile soil. Back then, there were 32 sake brewers in Yashiro-go (referring to the towns and villages of Takahata, Yashiro, Wada, Kameoka, Kamigo, and Futai-juku), with the Umetsu family leading the local sake industry. In the late Edo period, they prospered as the official sake brewery of the Uesugi family, who ruled 150,000 koku of the Yonezawa domain. The eleventh-generation brewmaster was a pioneer of the ginjō sake boom, while the 300-year-old commitment to sake-making was inherited by the twelfth-generation tōji, who has been at the helm since 2007.

Yonetsuru Junmai Ginjō Kimoto No. 6 Yeast is a limited edition junmai ginjo crafted using the traditional kimoto brewing method and offers a unique and nuanced flavour profile. The aroma is complex, with notes of green apple, pear, and citrus and subtle alcoholic sharpness. It presents a medium-bodied texture with a velvety mouthfeel that highlights the rich character of the rice. The flavour is well-balanced, with a slight sweetness that transitions into a dry, refreshing finish. A distinctive sour note lingers, a hallmark of kimoto-brewed sakes. While kimoto sakes are often associated with bolder, fuller-bodied profiles, this particular example offers a lighter, more approachable style.
