Shinkame Junmai Seishu is a regular Junmai aged for two years. It displays an unparalleled harmony of umami, deep flavour, slight sweetness, and richness.

Shinkame Junmai Seishu has a golden hue, a moderate body, and a velvety mouthfeel. It has a strong aroma of narazuke pickles and candied fruits. We enjoyed it at room temperature and experienced a complex and rich flavour, harmonizing tartness and bitterness with a subtle and milky sweetness. It has a lasting aftertaste with bitter accents and traces of spun sugar. The brewery describes it as "mature" and "plump".

In his "Sake Bible", Brian Ashcraft recommends heating it to 55°C, bringing out aromas of cooked rice, condensed milk, and the sake's distinctive lactic acid notes. He compares it to spending a sunny autumn day sprawled on cut rice straw.
