Shimizu Brewery was founded in 1751 by Shimizu Teiichirō (清水定一郎) in Tsukui, Sagamihara. It is one of the oldest sake breweries in Kanagawa. The fifth generation of the Shimizu moved to the current location in Nakano, Midori-ku, in search of better water quality. The ninth generation under Shimizu Tarō (清水太郎) currently runs the brewery.

Shimizu's Daiginjō won the Monde Selection Gold Award five consecutive years since 1996. The Junmai Daiginjō won the Monde Selection Gold Award for three straight years since 1997. It has received high acclaim in Japan and overseas, including the Gold Prize at the National New Species Appraisal. Their sake can be purchased directly from the brewery or at a liquor store in Tsukui.

With its golden hue, Shimizu's Iwaono Izumi Junmai Ginjō has a creamy texture that glides across the palate, leaving a gentle and well-rounded impression. The mouthfeel is harmonious, striking a delicate balance between unobtrusive sweetness and a subtle undercurrent of acidity. It lingers on the tongue, neither too dry nor overly sweet—medium dry in character. It concludes with a short and mellow finish. We paired it with a traditional Japanese meal—miso soup, baked salmon, and genmai rice—and this sake finds its perfect companion in Japanese dishes. Each sip enhances the flavours of the dish, elevating the dining experience. As the sake warms to room temperature, it reveals hidden layers of aromata with herbal notes emerging.
