Tenzan Brewery is a renowned brewery located in Ogi, Saga Prefecture. The Gion River, which flows in front of the brewery, is said to be the birthplace of Genji fireflies and is one of the best places in Japan to view fireflies. The brewery was founded in 1875 when Shichida Toshizo and his wife Tsuki, both previously engaged in milling and producing noodles, were asked to take over the brewery after it had gone out of business. In 1959, the third-generation Kuramoto Shichida Hideichi decided to focus solely on the sake brewing business and reorganised the brewery as Tenzan Shuzō. Nowadays, Tenzan is run by the sixth-generation tōji Shichida Kensuke (七田謙介) and produces sake, shōchū, and liqueur.

The historic brewery buildings from the Meiji, Taisho, and Showa eras have been designated national tangible registered cultural properties and are recognised as a Saga Prefecture Heritage Site. The leading brand is "Tenzan", derived from Mount Tenzan, the mountain peak to the brewery's north. "Iwanokura" is the regional brand exclusive to Kyūshū, and "Shichida" is the exclusive brand to retailers and sake shops.

Tenzan's unfiltered Shichida Junmai Ginjō Muroka boasts a delightfully fruity aroma reminiscent of ripe melon, juicy peach, and crisp green apples. A subtle lactic note and a hint of alcohol add complexity. The entry is gentle and creamy, with a burst of sweet fruitiness that quickly gives way to a refreshing acidity. A medium-level umami develops with a pleasant balance of fruity sweetness, tartness, and a subtle peppery spice. The texture is smooth and slightly creamy, leading to a long finish with a lingering acidity.

This Muroka delivers a delightful drinking experience, which we are glad to confirm for the second time this year: the balance of sweetness, umami, and acidity is well-executed, resulting in a savoury and satisfying sake. The rich aroma profile, smooth texture, and long finish make this a standout choice for fans of unfiltered sakes.

Shichida's Junmai Ginjo Muroka has a clear, pale-yellow appearance and a clean, gentle nose of light intensity. The aroma is fruity, featuring notes of peach, melon, and overripe figs, complemented by lactic tones.

The taste profile includes a medium sweetness and medium-plus acidity, contributing to a refreshing palate. A medium and gentle umami is characterised by fruity sweetness, refreshing acidity, and a juicy, peppery spiciness.

The texture is smooth and slightly creamy, leading to a long finish with an acidic tail. Overall, it offers a pleasant sweetness, a gentle umami, and a savoury mouthfeel with a rich array of aromas. This sake is unfiltered (muroka) and was pasteurised once—Tenzan at its best.
