Shichida Junmai 75% Polished Aiyama Muroka Nama (七田 純米 七割五分磨き 愛山 無濾過生) is a seasonal, limited-release junmai sake made with Aiyama (愛山) rice from Hyōgo, polished to 75%. Part of the Shichida "75% polished" series, which focuses on expressing the natural character of the rice by keeping polishing to a minimum. This is an unfiltered, unpasteurised sake (無濾過生 muroka nama), released from April. It shows a ripe, fruit-forward aroma and a gentle sweetness derived from the rice. The texture is smooth, with a full, rounded umami typical of Aiyama.

The flavour profile combines richness with a clean, slightly drier impression than previous releases in the series. Recommended serving temperature is lightly chilled (7–10°C). Food pairing: soy milk hot pot, simmered bamboo shoots with meatballs, and temari sushi.

Tenzan Brewery is a renowned brewery located in Ogi, Saga Prefecture. The Gion River, which flows in front of the brewery, is said to be the birthplace of Genji fireflies and is one of the best places in Japan to view fireflies. The brewery was founded in 1875, when Shichida Toshizo and his wife Tsuki, both previously engaged in milling and noodle production, were asked to take over the brewery after it had gone out of business. In 1959, the third-generation Kuramoto Shichida Hideichi decided to focus solely on the sake brewing business and reorganised the brewery as Tenzan Shuzō. Nowadays, Tenzan is run by the sixth-generation tōji Shichida Kensuke (七田謙介) and produces sake, shōchū, and liqueur.

The historic brewery buildings from the Meiji, Taisho, and Showa eras have been designated national tangible registered cultural properties and are recognised as a Saga Prefecture Heritage Site. The leading brand is "Tenzan", derived from Mount Tenzan, the mountain peak to the brewery's north. "Iwanokura" is the regional brand exclusive to Kyūshū, and "Shichida" is the exclusive brand to retailers and sake shops.

A fruity nose with notes of muscat grapes and banana, alongside light hints of chocolate and cocoa. The palate opens smooth and slightly viscous, with a full body and a creamy texture. There is a clear initial fruit-driven sweetness, balanced by gentle acidity and a pronounced umami. The flavours are rich and rounded, with a clean, dry edge providing contrast. The finish is long and crisp, with a light, sour tingle. Brilliant!
