Shichida Junmai 75% Polished Ōmachi Muroka Nama (七田 純米七割五分磨き 雄町 無濾過生) is made of Ōmachi rice from Okayama Prefecture, lightly polished to 75%. This is an unfiltered Junmai Nama with a low rice polishing technique well suited to produce the deep taste of Ōmachi. It is a seasonal sake available from February.

Best consumed chilled to 7-10°C.

Best paired with cooked pork, stir-fried green pepper and beef, and deep-fried food.

Tenzan Brewery is a renowned brewery located in Ogi, Saga Prefecture. The Gion River, which flows in front of the brewery, is said to be the birthplace of Genji fireflies and is one of the best places in Japan to view fireflies. The brewery was founded in 1875 when Shichida Toshizo and his wife Tsuki, both previously engaged in milling and producing noodles, were asked to take over the brewery after it had gone out of business. In 1959, the third-generation Kuramoto Shichida Hideichi decided to focus solely on the sake brewing business and reorganised the brewery as Tenzan Shuzō. Nowadays, Tenzan is run by the sixth-generation tōji Shichida Kensuke (七田謙介) and produces sake, shōchū, and liqueur.

The historic brewery buildings from the Meiji, Taisho, and Showa eras have been designated national tangible registered cultural properties and are recognised as a Saga Prefecture Heritage Site. The leading brand is "Tenzan", derived from Mount Tenzan, the mountain peak to the brewery's north. "Iwanokura" is the regional brand exclusive to Kyūshū, and "Shichida" is the exclusive brand to retailers and sake shops.

Shichida Junmai Omachi Muroka Nama offers a delightful sensory experience. It has a beautiful golden hue. Subtle notes of chocolate and vanilla complement its fruity aroma. Upon tasting, the texture resembles satin, with a medium body and a gentle effervescence. The mouthfeel is aromatic and layered, revealing both fruitiness and depth. The finish leaves a refreshing hint of bitterness—a delight.

These oversized, mushroom-shaped bottle caps seem to be increasingly used on premium-type sake. They facilitate the handling and look very stylish.
