Sake Hitosuji Junmai Ginjō Kinrei (純米吟醸 金麗) is made from Omachi rice grown in Okayama and milled to 56%. It is a flavourful sake that brings out the whole character of the Omachi rice — a masterpiece that lets you experience the rich flavour of rice even in its refreshing taste. Vegan-certified and best paired with pork shabu-shabu, yakitori, mackerel, and grilled and boiled fish.

Located in Karube, an area long renowned for producing some of the finest Omachi rice, the brewery has played a key role in reviving this historically significant sake rice variety. With dedication and conviction, it succeeded in restoring the once-lost Karube-grown Omachi rice, bringing it back to prominence under the name Akaiwa Omachi Mai. The use of this rice is known to enhance the complexity and depth of its sake.
