Nakamura Brewery in Akiruno, western Tōkyō, was founded in 1804. Also known under its brand name Chiyotsuru (千代鶴, "Thousand-year crane"), the brewery uses clear water pumped up from 170 metres underground that also feeds the Aki River and carefully selected rice. Chiyotsuru maintains a Sake Museum in a traditional brewery building exhibiting tools and equipment for sake brewing.

Aroma of narazuke pickles and citrus. Smooth and bitter on the palate, with a moderate dryness and a delicate harmony of mild sweetness and tangy acidity. Hints of spice and fenugreek. Lingering finish with a clean aftertaste. A superb sake!
