Pours clear with lively initial bubbles that settle into a fine, delicate mousse. The nose is restrained, with light fruit and lactic notes—smooth and creamy mouthfeel; gentle effervescence; mild sweetness and acidity balanced. The finish is clean and crisp.

This is a bottle-fermented sparkling sake made using traditional methods. Hints of cherry and lychee with elements of white flowers and rose, while the flavour remains soft and measured rather than showy. Brewed by Nagai Shuzo in Kawaba Village, Gunma Prefecture, it uses natural spring water from the Oze area and Yamada Nishiki rice. It works well alongside a range of foods, including cheese, foie gras, chocolate, and ice cream.
