A fragrant bouquet with distinct fruity and floral notes underpinned by a rich rice aroma. The flavour opens softly yet with depth—elegant, well-balanced, and featuring a smooth, satin-like texture. On the palate, it presents a dry profile with a subtle bitterness and a strong, lingering rice character. It is not sweet and complements rather than competes with food, pairing well with delicate, uncomplicated dishes. The finish is brief and gentle, accompanied by a noticeable scent of brewer's sake (added alcohol).

We received this sake through a crowdfunding initiative we supported. While labelled as a Junmai, the rice has been polished down to an impressive 49%.
