Midorikawa Settō Chozōshu "Midori" Junmai Ginjō is made of Koshitanrei rice developed and grown in Niigata and milled to 55%. It is a seasonal sake that is stored for six months in snow-covered domes, maintaining a constant temperature of around 0°C.

This snow cellar-aged Junmai Ginjō has gentle aromas of rice, ginjōka and melon on the nose. This sake stands out for its smooth, understated character. The palate opens softly with a silky texture and medium body. Fragrant ginjō notes complement rich rice flavours, while a delicate fruitiness and gentle umami gradually unfold. The acidity becomes more pronounced towards the middle of the palate, followed by a subtle spiciness. It finishes cleanly, medium-length, with a touch of pleasant bitterness.

Settō Chōzōshu Midori is a junmai ginjō that spends several months maturing in snow-cooled storage at a temperature of nearly 0°C, a method that slows down the ageing process and keeps the sake stable. On the nose, it is restrained, with a hint of fruitiness and a touch of spice. The flavour is clean and balanced, carrying a gentle sweetness as well as a measured acidity and a slight edge of bitterness. Medium-bodied but light on the tongue, it finishes quickly and crisply, leaving a trace of rice and a faintly spicy aftertaste. It shows best when chilled, though it can also be taken gently warmed.
