Kubota Sagaminada Nigorizake is a Tokubetsu Honjōzō made of Miyamanishiki rice from Nagano milled to 60%. It has the fresh aroma typical of nigorizake and is sold from the beginning of December.

The aroma leans fruity, with berry-like sweetness and a light floral touch. On the palate, it opens fresh and lively, with a faint fizz but no real foam. The body sits in the middle, smooth and slightly creamy, and the balance is easy, with gentle sweetness followed by clean acidity. There are herbal notes that feel very much in line with Sagaminada's house style. It has the typical sweetness of an active nigori, but it never becomes cloying, finishing dry enough to keep the rice character clear. The mild carbonation lifts the spice and creaminess typical of honjōzō. After turning the bottle to bring the lees back into suspension, the sake picked up a firmer, more mineral edge and a crisper finish.

Fresh and mildly cloudy. Very refreshing and mild, with no effervescence and little acidity, but with a distinctive herbal layer that makes Sagaminada's sake unique. We had it over dinner and didn't put it back into the fridge. Brilliant!
