Jōzen Josui Junmai Ginjō is made of rice grown in Niigata and milled to 55% and Association No. 1801 yeast. This unpasteurised "sake nouveau" was made from rice harvested last autumn.

Jozen Snow is a seasonal sake from Niigata made with locally grown new crop rice, making it the first unpasteurized Jozen released this season. It offers a subtle aroma with fruity and sweet notes. The palate experience is smooth and light-bodied, with moderate sweetness and a slightly delayed mouthfeel. The finish is long and mild, concluding with a touch of sourness. While initially crisp and dry, characteristic of Niigata sake, it quickly develops a richer flavour with umami. This well-balanced sake is best enjoyed with hearty seafood and vegetables.
