Ikekame Junmai Ginjō Kurokabuto Yamadanishiki Namazake (池亀 純米吟醸 黒兜 山田錦 生酒) is made of Yamadanishiki milled to 50%. Kurokabuto is the brewery's flagship brand. Its main characteristic is the use of 'black kōji' (黒麹 kurokōji), a fungus used to produce Awamori liquor in Okinawa or Shōchū in Kyūshū but rarely for sake brewing. Kurokōji actively ferments citric acid and keeps the moromi (mash) strongly acidic, which prevents the growth of bacteria that may occur during the fermentation of the moromi. Therefore, it is suitable for sake brewing in warm regions. The acidity spreads with a fruity sweetness, like when you bite into an apple with plenty of honey. The freshness is outstanding, as it is bottled immediately after pressing.

The March 2018 edition of the gourmet magazine 'dancyu', in a special feature on sake, mentioned "Ikekame Junmai Ginjō Kurokabuto Yamadanishiki'' as a representative alcoholic beverage using black kōji. It transmitted a "feeling of the dignity of Kyūshu, the great land of shōchū, with the sweet aroma of pears and strawberries, and the balance of gentle acidity.''

Ikekame Brewery in Kurume, Fukuoka Prefecture, was founded in 1875 on the banks of the Chikugo River by the first-generation Genzō (池亀源蔵), an instructor and master swordsman in the Kurume Domain. Genzō was an enterprising man who devised a new brewing method using the water of the Chikugo River and contributed to sake brewing in the Chikugo region by sending out master brewers he trained. In May 2007, the brewery released its signature product, Kurokabuto (黒兜) Junmai Ginjō.

Ikekame Junmai Ginjō Kurokabuto Yamadanishiki Namazake presents a clear and pale-yellow appearance, with a clean and medium-intense nose hinting at a delightful fruity bouquet, including apples, melon and strawberries, underscored by a pleasant sweetness. While its green-labelled brother is made of Yamdanishiki and Yume Ikken rice, the white label relies on Yamadanishiki only.

It balances the palate with medium sweetness, high acidity, and medium levels of umami and alcohol, creating a harmonious medium body. The flavour intensity is slightly above average, featuring a fruity sweetness reminiscent of green apples and intense acidity and citric notes, culminating in a strong bitter aftertaste. The texture is smooth, making for a leisurely sip, while the finish is short yet marked by lingering acidity. The sake's character is defined by its refreshing and pronounced acidity, which persists from the first taste to the last, with a sourness that unfolds gracefully and a grapefruit bitterness that softens at room temperature, resulting in a rich, fulfilling, and refreshingly easy-to-drink experience.
