Hirata Junmai Ginjo Shiboritate Nigori Shoryu no Mai (搾りたてにごり生酒 昇龍乃舞純米吟醸)

Hirata Junmai Ginjō Shiboritate Nigori Shoryū no Mai (搾りたてにごり生酒 昇龍乃舞純米吟醸) is made of domestic rice (Hidahonmare?) milled to 50%. It is a shiboritate, the freshest sake of the year, usually pressed during the cold months from November to March, unpasteurised, directly bottled, often slightly carbonised and shipped right away, and a nigori, coarsely pressed sake mash that retains much of the rice solids in the moromi, resulting in sake with a cloudy or milky colour. The "Dancing Dragon" was immediately frozen after the pressing and shipped.

Hirata Brewery in Hida Takayama was founded in 1769. Takayama is almost in the centre of the Japanese archipelago, surrounded by the 3,000-metre-high Hida Mountains. The Hirata were merchants dealing in hair oil and candles in the centre of Hida Takayama. The fifth generation of the Hirata founded the brewery in the Meiji era (1868-1912).

Hidahomare is Gifu's leading rice for sake brewing. In winter, the snow in the Northern Alps moistens the rice fields as subsoil water, and the rice grown there absorbs plenty of nature's bounty. The large grain size, low protein content and high expression of heart white make it ideal for premium sake brewing. Sake made from Hidahomare has a good balance of taste. Hidahomare is used in Hirata's Hida no Hana (飛騨の華) and Hiro (飛鷺), making them excellent 'Gifu jizake'. The brewery uses soft subsoil water from the Northern Alps.

In 2021, Hirata added three new brands: Shōryū no Mai (昇龍乃舞), Takayama (多賀山), and Hiro (飛鷺).

This sake was a special gift to those who joined Hirata's NFT campaign, which was limited to 100 customers. It was delivered deep frozen.

It has a milky white appearance with plenty of fine particles and floating sediments, giving it a lively fizz. Its delicate aroma of ripe fruits, yoghurt, and smooth and gentle acidity balance well with its subtle earthy flavours. A slight bitterness was present at the end that added complexity. It is a refreshing and drinkable sake but has a relatively high alcohol content of 18%, unlike most nigori.
