This Junmai Ginjo offers a fruity nose with notes of green apple, citrus, and berries. The initial impression is quite refreshing. Medium-bodied with a smooth, satin-like texture, it has a rich and full entry with a pronounced fruity sweetness that gives way to a refreshing acidity and a pleasant astringency. The finish is quite dry, with a lingering bitterness and a slight sour tingle. This is an elegant sake produced by Hakubanishiki Brewery and released under the Châteraisé label, a well-known Japanese confectionery company. My wife found this while buying cakes.
