Fukumitsuya Kazeyo Mizuyo Hitoyo (風よ水よ人よ)

Fukumitsuya Kazeyo Mizuyo Hitoyo (風よ水よ人よ) is a low-alcohol junmai sake produced by Fukumitsuya using the brewery's proprietary FS9 yeast. It is designed with an alcohol content of 9%, placing it below the typical range for sake. It is positioned as a light, food-oriented sake with a mild, slightly sweet profile supported by moderate acidity and a clean finish. It is as much a standalone drink as it is part of a meal, where it can accompany a wide range of cuisines.

The lower alcohol level and balanced structure also make it suitable as a base for sake-based cocktails. Best served cold. Recommended food pairings: French Fries, Carpaccio, Bagna Cauda, Gazpacho, Paella, Chinese Fried Chicken, Tomato Scrambled Eggs, Fried Tofu, Miso-Grilled Cod.

Fukumitsuya Sake Brewery is located in Kanazawa, Ishikawa Prefecture. It was founded in 1625. The culture of Kanazawa flourished during the Edo period , when the capital of Kaga Province became famous for its craftsmanship in kimono, gold beating, lacquerware, and ceramics. The town, surrounded by the sea and mountains, also enjoyed a rich food culture. Today, it is known as a modern city with a history of traditional Japanese culture that is still appreciated. Fukumitsuya is known as a junmai-gura, a brewery specialising in junmai sake.

The Kagatobi label (加賀鳶) derives from the firefighters of Kaga (modern-day Ishikawa Prefecture) who served at the domain's Edo residence. They conveyed an image of strength and resilience, being highly skilled yet short-tempered, qualities that made them popular among the Edo population. Kagatobi is made from high-quality sake rice and local groundwater, with a variety of tastes reminiscent of the Kaga firefighters.

A moderate nose with hints of grain and dried fruit. The entry is gentle and smooth, with a light body and a silky texture. The initial impression is notably thin, almost as if slightly diluted. Fukumitsuya describes it as a "beginner's sake" that can also be used as a cocktail base. That might be true. Lovers of heartier brews might not get their fill of satisfaction, though. Good in taste and intention, but falls short of expectations. We decided to use it for cooking.
