Fujinishiki Sake Brewery is in Fujinomiya, Shizuoka Prefecture, an area known as Yuzuno no Sato (柚野の里). It was founded in 1688. However, even at the time, it was not the sake brewery it is today. It was initially a local landowner who ran a large farm that employed many tenant farmers. At that time, they received a lot of tenant rice, so they started brewing sake using that rice, which led to the brewery becoming what it is today. At that time, they did not brew sake to sell but as a reward for the tenant farmers and a sacred offering at the autumn festival, which was their only source of entertainment. Later, during the chaotic period after the war, they lost most of their farmland due to the farmland reform (1946). They took this opportunity to make sake brewing, a side job until then, their primary business.

The brewery was incorporated in 1963. Some 17 kurabito produce sake, fruit wine, umeshu (梅酒 plum wine), and yuzu liqueur.

Fujinishiki's Honjozo offers a delightful bouquet of dried fruits and nuts with a sweetness reminiscent of caramel and chocolate. The sake is smooth and creamy on the palate, with a pleasant sweetness that lingers. However, the finish is surprisingly spicy and sharp, adding welcome complexity. Fujinishiki's characterization of this Honjozo as a "medium-range" product is accurate. It's a well-crafted sake that balances sweetness and spice well--a good companion for Japanese and Western food.
