Fujii Brewery was established in 1872, the fifth year of the Meiji era, as "Shusendo Manrikiya" (酒仙堂 萬力屋) in Mizuike, Nozu Town. It is situated in the upper reaches of the Ono River, one of Japan's best in the national first-class river water quality survey in 2004. The brewery follows the principle of "wajōryōshu" (和醸良酒), which means "harmonious brewing of good sake". It regards sake as a cultural product, a gift of nature, and its bounty. It uses only high-quality ingredients, water, and a natural environment for its sake brewing. Fujii Brewery is in a mountainous area in central Ōita Prefecture, with abundant limestone caves and clear water springs. It was the first sake brewery in the prefecture to obtain ISO14001, and it continues to produce environmentally friendly.

Kurabito no Banshaku has a rich aroma of dried fruits reminiscent of narazuke pickles and overripe figs. It is golden and has a thick, creamy texture that glides smoothly on the tongue. It is sweet and strong in the middle, with a pronounced umami flavour and a gentle bitterness, and ends with a long and bitter aftertaste and a hint of sourness. This is a true genshu, undiluted and potent with an alcohol volume of up to 21%!

This is part of a jizake set we ordered from Belluna Gourmet, an online shop that also sells on TV. The brewery does not list this item on its website. Perhaps that's why they call it "kurabito's secret"?
