Can you say both (a) and (b)?
(a) This is much/far better than that.
(b) This is much/far nicer than that.

Do you ever say (c) , (d) , (e) or (f)?
(c) This is better than that by far.
(d) This is by far better than that.
(e) This is by far the best.
(f) This is the best by far.

Yes, all of those are workable phrases.

I personally don't think "much nicer" is correct grammar. It may or may not be correct grammar but for some reason it just doesn't sit right with me.

It seems that it would be better to avoid using "much/far nicer".
 
"much/far nicer" are both completely fine. Both are grammatical and are commonly used. There is no need to avoid them.
