What's the "right" way to talk to someone you just met?

I want to know how you'd speak with and regard someone you just met. =/ I know that you would add "-san". I'd just like to know the polite way you'd speak with someone.

What's the social status of the person whom you are meeting? The general rule is that you add -san to the person's last name. You could also try some honorific language, but once you start using it, you have to keep on using it. I usually ask the other person whether or not we could use "tameguchi" (language that people of same social status use). Usually the response is yes.
