Just wondering am I actually pronouncing these right?

ない Na-ee or Nai

すい Soo-ee

Just wondering because someone laughted at my pronounciation earlier when I was talking. I always say verbs as they are said to sound in Japanese because their different to their English counterparts like..

I - Eye - In English or ''eh'' if you do phonetic which is the ''E'' sound in Japanese...

I - ee - In Japanese

And Nai in English is pretty much N'eye isnt it. Have I been pronouncing suffixes wrong all this time?

Didn't you pronounce い as a long vowel, like "ee" in "eel"? い in ない/すい is a short vowel, like "i" in "ill". Thus, ない is like "n + eye", as you wrote, but not "na + ee". See the audio file in the page linked below.
