Fundodai, based in southwestern Japan's Kumamoto prefecture, has brewed soy sauce since 1869. The company released a transparent version in 2019 to commemorate the 150th anniversary of its soy sauce production. Fundodai typically makes the transparent product by brewing soy sauce, then removing the colour through a proprietary process and fine-tuning the flavour. [...] Fundodai exports translucent soy sauce to 25 markets outside of Japan, and these sales account for 15% of all revenue. "People overseas are sensitive to colour," Yamamura said. The clear sauce "is becoming popular in China, Europe and Southeast Asia." Fundodai's Asakusa store counts international tourists as roughly 40% of the customers. "On weekdays, over 50% of our customers are from abroad," said a shop staff member.
