What is the main stringed instrument being played in these songs?

I know of 3 different japanese stringed instruments... the Koto, Shamisen and Biwa, but I don't know how each sound.... is it even one of these though? (since the songs are electronically composed it seems)

I think the main instrument is the koto. They don't sound like the shamisen or biwa.

I agree with epigene. It does sound like Koto, but just like you guessed it's probably done by a keyboard.
