Yuho Yamaoroshi Junmai Namazake boasts a captivating aroma of spicy, crisp notes and hints of dried fruits. The palate is gentle and mellow, with a light body and a moderately sweet mouthfeel balanced by the right amount of acidity. Despite its initial lightness, this sake boasts a full-bodied flavour profile.

The finish is long and refreshing, with a lingering acidity and a touch of bitterness. As a young sake, it exhibits a slight bitterness and astringency, contributing to its energetic character. We enjoyed this sake over several days from an isshōbin (1.8-litre bottle), and we were pleased to observe how it evolved, becoming smoother and sweeter.
