Wagauji Junmai Daiginjō Yamanochō Hiyaoroshi (吾有事 純米吟醸 山の頂 ひやおろし [R5BY秋]) is made of Miyamanishiki milled to 50%. It has a refreshing aroma of grapes and melons. The sharp acidity peculiar to the rice variety becomes mellow with age, resulting in a well-balanced taste of sweetness, umami, bitterness, and a crisp aftertaste.

Wagauji Hiyaoroshi's flavour brings out the flavour of seasonal ingredients such as Pacific saury, salmon, and ginkgo nuts. It can be enjoyed chilled for a crispy taste or warmed for a more relaxed indulgence.

Ōujiman, a historic brewery rooted in Tsuruoka, Yamagata Prefecture, dates back to 1724. However, due to financial constraints and a lack of successors, the brewery ceased operations in 2009, leaving its iconic "Ōujiman" brand dormant. Recognizing the brewery's rich heritage, fellow Yamagata-based breweries extended a lifeline. In 2012, Ōujiman made a triumphant return, albeit on a modest scale, producing a mere 300 koku of sake. A new chapter unfolded in 2017 with a dynamic young team introducing the "Wagauji" (吾有事) brand. Today, this youthful brigade carries the torch, continuing the legacy of Ōujiman and crafting the exquisite "Wagauji" sake.

Take two! Exhibiting aromas of berries, grapes, and citrus fruits: pronounced acidity and a noticeable bitterness on the palate. In November, we enjoyed it chilled and at room temperature. However, upon warming the sake this time, we found that it retained much of its citric acidity and spiciness while becoming smoother and milder. Finally, we tried it piping hot, which allowed the acidity to subside entirely and the spiciness to mellow significantly. In this state, the sake revealed a wonderfully mild and pleasant character.

Wagauji's autumnal Junmai Daiginjo offers a refreshing departure from the typical heavier autumnal sakes. By incorporating white koji into the brewing process, this sake gains a bright acidity that complements the rich fruitiness of the Miyamanishiki rice.

While it's suggested that this Junmai Daiginjo can be enjoyed heated, its vibrant character shines through at room temperature, making it a delightful choice for autumnal sipping.
