This daiginjō sake showcases British master brewer Philip Harper's approach to the depth and structure of yamahai brewing. It is made as shizuku-zake using the fukurotsuri method, in which sake is allowed to drip naturally from hanging bags of mash. Because no pressure is applied and the sake is handled as little as possible, the process is slow and yields only a small volume, producing an exceptionally pure and refined aroma and flavour. For this reason, such sake is often reserved for competitions and is rarely available commercially.
This limited release is part of Tamagawa's "3U" series (unfiltered, undiluted, and unpasteurised), presenting sake in its freshly pressed, untreated state. The aroma is recognisably Tamagawa, with ripe fruit sweetness and lactic notes. On the palate, it enters smoothly, with a soft, velvety texture and a full yet clear structure. While it can be enjoyed well chilled, it shows particular depth and balance as it approaches room temperature.
