Takashimizu's Tokubetsu Junmai is a nice example of kimoto (生酛) brewing done a bit differently. While many kimoto styles tend to be rich and powerful, this one is softer and more delicate. The flavour brings out the natural depth of the rice without being overwhelming. You get a gentle, clean aroma from the yeast, and the taste is smooth with a mellow richness that unfolds nicely; it's well-balanced and pairs well with food, making it an excellent choice for mealtime sake. When gently warmed—around body temperature or a bit hotter —a soft, banana-like note from the yeast becomes more noticeable, giving the aroma and flavour a pleasant shift. It's clean, versatile, and pairs well with a wide variety of dishes. Great for enjoying a relaxed drink with a meal. In warmer seasons, it's also refreshing to serve chilled.
