Seikyō Takehara Junmai

Seikyō Takehara Junmai is made with rice grown in Hiroshima and milled to 65% as well as K1001 yeast. This Junmai represents a return to the origins of Japanese sake, serving as the cornerstone of Nakao Brewery since its founding.

We were glad enough to enjoy an ishobin (a 1.8L bottle) of this fantastic brew over several days. The aroma offers lovely notes reminiscent of overripe fruit. It begins gently with a silky, satin-like texture and a light to medium body, crafted using Hiroshima's famously soft water. It leans slightly sweet with a generous amount of umami, yet remains overall mild and well-balanced, with just enough acidity to give it structure. Exceptionally versatile, this sake can be enjoyed at any temperature, from chilled to warm. During these sweltering summer days, it was equally delightful both chilled and at room temperature.
