This once-a-year, freshly pressed sake from Kojima Sohonten's "Retsu" line showcases the brand's signature dry, crisp character. Dewa San-san rice contributes to a light and delicate flavour profile. Aromas of pear, melon, and peach are present, along with subtle citrus notes. The initial palate is gentle and soft, with fruity flavours reminiscent of pear compote and cloves. A slight acidity is noticeable, complemented by a refreshing spiciness, pronounced umami, and a long, spicy finish. Warrants five stars.
